Super healthy and easy to make and it is always keeping me full until my next meal. There’s no mayo in this recipe, instead it’s a lovely mix of yoghurt, tuna, shallots, tomato, flavoured with fresh dill and American mustard. 

Serve 1 
1 toasted bagel
100g can tuna in spring water, drained 
1 1/2tbsp thick yoghurt 
1/2 tomato, finely chopped
1/2 tbsp finely chopped shallot
1 tsp American mustard
1 avocado, smashed with lemon zest
Salt @cornishsea_salt 

Method 
Toast the bagel, set aside. Meanwhile in a bowl mix the tuna, yoghurt, shallot, dill, tomato  mustard and season well. Spread the smash avocado on the bagel, top with the tuna mix. Sprinkle more dill and seeds.

Chicken traybake 

I love dinners like this 🤍 Nothing fancy, just good food made easy. If you’re looking for a no-fuss dinner, this chicken traybake is warm, wholesome, and comforting — perfect for busy midweek nights when you still want something homemade.

Serves 2
2 chicken legs
300g cherry tomatoes 
3 garlic cloves, whole with skin on 
1 red onions, finely sliced
100g green olives
1 tbsp herbe de Provence 
2 tbsp Extra virgin olive oil 

Method
Preheat the oven to 200°C (180°C fan).
Place the chicken legs in a large roasting tray. Season the meat. Add the cherry tomatoes, sliced red onion, garlic cloves (left whole with skin on), and green olives. 
Drizzle over the extra virgin olive oil and sprinkle with the herbes de Provence. Season well with salt and black pepper.
Roast for 40–45 minutes, turning the tomatoes and onions halfway through, until the chicken is golden and cooked through and the tomatoes are soft and bursting.
Serve straight from the tray, spooning over the roasted tomatoes, olives, and juices. Perfect with crusty bread, rice, or potatoes.

Chicken and orzo soup with ginger and lemon 

I love making a big batch of this healthy soup especially when I am felling a bit run down. It is nourishing and packed with ginger and lemon which support the immune system.

Serves 2-3 
2 chicken breast
1 onion, diced 
2 carrots, diced 
Handful of cavolo Nero, sliced
4 garlic cloves, sliced 
1 piece of fresh ginger, sliced 
120g orzo 
1/2 lemon juice
1 tsp Dijon mustard (optional)
1L chicken stock, I used instant chicken bone broth sachet @frejafoods 
1 tbsp extra virgin olive oil, I used @the_governor_evoo

Method 
Sautés the onion until golden, add the chicken garlic, ginger, bone broth and lemon juice. Season well and simmer for 10 minutes. Add the orzo, carrot, cavolo Nero, mustard and thyme, cover and cook gently for another 15-20 minutes. Remove the chicken, and rest for a few minutes before shredding, add it back to the soup. Serve and add extra lemon juice and olive oil. Enjoy 🫶
