These cookies are made with oat flour and almond flour, which provide fiber, healthy fats, minerals, and a little extra staying power compared to traditional bakery cookies. Paired with coconut sugar and simple ingredients, they’re proof that dessert can taste amazing while also offering extra nutritional value.

Because if I’m going to enjoy a treat, I want it to deliver on flavor AND substance.

dEATS:
-Combine 2 cups of oat flour, 1 ½ cup of almond flour, 1 tsp baking soda, 1 tsp cream of tartar, 1 tbsp cinnamon, and ¼ tsp salt.
-Add 1/2 cup melted coconut oil, 2/3 cup coconut sugar, 2 eggs, and 2 tsp vanilla extract.
-Refrigerate batter for 30 minutes.
-Scoop into dough balls.
-Roll in a mixture of ½ cup sugar and 2 tbsp cinnamon.
-Place on a parchment lined baking sheet.
-Bake at 350ºF for 10-11 minutes.
-Cool and enjoy.

Soft and fiber-filled cake, rainbow sprinkles, buttery crumble topping, and a sweet glaze drizzle… but made with simple ingredients that bring a little more substance to the celebration.

-Preheat the oven to 350ºF.
-Whip together 1/2 cup high quality softened butter and 1 cup coconut sugar.
-Add in 3 eggs, ½ cup milk of choice, and 2 tsp vanilla extract.
-Fold in 2 ⅓ cup oat flour, a pinch of salt, and 2 tsp baking powder.
-Fold in ⅓ cup sprinkles of choice.
-Pour into an 8x8 pan.
-In a separate bowl combine ½ cup coconut sugar, 1/4 cup melted butter, ½ cup oat flour, and ¼ cup almond flour.
-Crumble over top of batter.
-Bake for 40-45 minutes.
-Optional: Drizzle with a glaze of 3 tbsp powdered sugar and a few drops of milk.

-Spread 8 oz of cream cheese of choice onto a parchment lined 8x8 pan and freeze until set.
-Preheat the oven to 350ºF.
-Combine 2 eggs, 1 cup coconut sugar, ½ cup melted high quality butter or coconut oil for dairy-free, and 1 tsp vanilla extract.
-Fold in 2/3 cup cocoa powder and ½ cup oat flour.
-Spread half of the batter into a parchment lined 8x8 pan.
-Top with set cream cheese.
-Top with remaining batter.
-Chop sandwich cookies of choice (gluten-free/RSF if desired) and sprinkle onto batter with extra chocolate chips.
-Bake for 25-28 minutes.
-Cool and slice.
