Store cupboard essentials: oil, minced garlic, chilli flakes, salt & pepper, dried parsley 

Ingredients

- 1 pack tortellini (flavour of choice!)
- 2tsp minced garlic 
- 1tsp chilli flakes
- 1tbsp tomato puree
- 1-2tbsp creme fraiche
- Handful fresh basil
- Handful spinach 
- Salt & pepper
- Cheddar cheese
- 1tsp dried parsley 
- 1 garlic baguette 

To make...

🥫Par boil your tortellini for 2-3 minutes, drain and aside - reserving 1 cup of pasta water. 

🥫In a frying pan, fry off some minced garlic and chilli flakes before adding your tomato paste. 

🥫 Cook for a further 2 minutes before adding creme fraiche and your tortellini. 

🥫 Mix well, adding fresh basil and a little pasta water until you have your desired consistency. 

🥫Add spinach and top with cheddar cheese and dried parsley.

MEAL 4: SPICY FAJITA TRAY BAKE 

🍴 3 portions*
⏰ 35 minutes 
Store cupboard essentials: oil, minced garlic, smoked paprika, chilli powder, onion granules, ground cumin, cayenne pepper, salt & pepper, BBQ sauce, dried parsley, lemon juice 

Ingredients

- 4-5 potatoes
- 2tsp smoked paprika
- 1tsp chilli powder
- 1stp minced garlic 
- 1tsp onion granules
- 1tsp cumin
- 1sp cayenne pepper
- 1 red onion
- 2 bell peppers
- 2-4 flat top mushrooms
- 200g chickpeas
- 200g chopped tomatoes 
- 1tsp tomato puree
- 1tsp BBQ sauce 
- 1tsp dried parsley 
- Leftover wraps!
- Grated cheddar
- 2tbsp creme fraiche
- 1tsp lemon juice 
- 1 avocado

To make...

🌶 Preheat your oven to 200 degrees. 

🌶 Dice up your potatoes, drizzle with olive oil & season with smoked paprika, chilli powder, onion powder, ground cumin, minced garlic, salt & pepper.

🌶 Pop into the oven for 15 minutes.

🌶 Whilst they cook, slice up all of your veggies. Once the potatoes have been cooking for 15 minutes, remove from the oven and add your veggies & chickpeas. 

🌶 Mix together your chopped tomatoes with tomato puree, bbq sauce, smoked paprika & dried parsley and add it into your dish. 

🌶 Mix well & pop it back into the oven for 15 minutes.

🌶 Whilst this cooks, chop up any leftover wraps you have from the tofu kebabs into triangles, spray with some olive oil and sprinkle with some salt before airfrying for 5 minutes to make some nachos. 

🌶 Once your potatoes are cooked, add a general helping of cheddar cheese on top and pop back in the ovem for 3-5 minutes.

🌶 Add some lemon juice and dried parsley into your creme fraiche and layer everything up along with some fresh avocado. 

🌶 Scoop up with your nachos & enjoy!
