Fried chicken, fun cocktails, pints, a cheeky shot… you know this was a brilliant evening 🤪

@thedoghouseedinburgh is an Edinburgh institution mainly known for their iconic decor and unique cocktails. However they also have regularly rotating food vendors with @chixedinburgh being their current. And I must say it is a match made in HEAVEN! 

I’ve already tried @chixedinburgh a few times at its spot at @edinburgh_streetfood and have always loved it. Super crispy on the outside and tender and juicy in the inside - they truly have perfected fried chicken! Paired with a HUGE selection of dips and everyone’s childhood favourite waffle fries😍. We tried:

Food:
-Signature Chicken Tenders
-Signature Chicken Sandwich with lettuce, buttermilk ranch, fresh herbs and pickles
-Waffle Fries
-Korean Slaw in a tangy lime dressing 
-Dip Selection (Ranch, Carolina Reaper Hot Sauce, BBQ, Pesto Mayo and Cali Gold which was a creamy honey mustard) 
Drinks:
-Lavander Menace (gin, lavender, raspberry liquor, lychee, lemon and tonic)
-Queen of Green (jalapeño tequila, Cointreau, apple, lime and tajin)
-Beavertown Larger
-Baby Guinness 

As I’ve said everything was delicious and as a condiment girlie the dip selection was my idea of heaven! Especially the hot sauce which is a must for any spice fans! 

Overall the perfect evening and a great spot for enjoying a few drinks, food and catch up with friends 🥰 Thanks @chixedinburgh and @thedoghouseedinburgh for a wonderful time!

Butterbean Saag Curry with Chilli Oil Roasted Celeriac 🧡

Warming spices, earthy spinach, creamy butterbeans, nutty roasted celeriac and the perfect chilli kick… this is hands down one of my favourite curries I’ve ever made🌶️

Inspired by a saag paneer I wanted to make a slightly lighter, plant based, budget friendly version without compromising on flavour and this definitely hit the spot! I maybe even prefer it to the original…

Celeriac is one of my favourite veggies and is so underrated but has a lovely nutty, earthy flavour that really compliments warming curry spices so well. As does the earthy spinach so it was a match made in super green heaven 😂

Crispy Chicken, Charred Romaine and Basil Salad with a Creamy Sun-dried Tomato Dressing 🧡

Anything but a boring salad! With crispy chicken, smokey charred lettuce, a sweet spicy creamy dressing and fresh basil this salad is sure to bring the sun to the currently very gloomy Edinburgh 🙃

The homemade crispy chicken uses a mix of panko and cornflakes for the coating to get it extra nutty and crunchy. I then baked mine in the airfryer to make this a slightly healthier (but still delicious) version☺️. But the star of the show here is really the dressing! Made by blending sundried tomatoes, chilli and Greek yogurt with a little lemon you have the perfect sweet, tangy, spicy, creamy sauce that you’ll want to drown everything in 🌶️

This recipe is perfect for meal prep and leftovers make a great wrap filling! And for the first time …. RECIPE ON MY SUBSTACK🥳
