Hot Honey Chicken “Zinger” Burgers 🍔🔥

These are my favourite for a fakeaway burger night at home. Crispy Dorito coated chicken fillets glazed in hot honey, finished with melted cheese in a soft bun. Perfect with a crunchy salad or some homemade fries 🤌🏼

Ingredients (serves 2):
2 x 110g chicken breast, butterflied 
1 tsp smoked paprika
½ tsp garlic granules
1/4 tsp cayenne pepper 
White pepper 
Salt 
10g cornflakes, finely crushed
30g chilli heatwave doritos crushed 
1 small egg whisked 
35g honey 
1 tbsp hot sauce 
2 reduced fat cheese slices 
2 brioche buns (I used st Pierre which are higher cal you can use supermarket own to lower cals) 
2 heaped tsp lighter mayo 
50g shredded lettuce 
Pinch of mild chilli flakes 

💕Season the butterflied chicken fillets with the smoked paprika, garlic granules, cayenne pepper, white pepper and a good pinch of salt.

💕Mix the crushed cornflakes and Doritos together in a shallow bowl. Dip each chicken fillet into the whisked egg, shaking off any excess, then press firmly into the crumb mixture until well coated all over.

💕Place the coated chicken into the air fryer basket  and cook at 190°C for 15 minutes, turning halfway, until cooked through or bake at 220°C / 200°C fan for 20-22 minutes. 

💕In a pan or microwave, gently warm the honey and hot sauce until loose.

💕Once the chicken is cooked, brush a small amount of the hot honey glaze directly over the hot chicken fillets. Place a cheese slice on top of each fillet and allow it to melt slightly from the heat.

💕Lightly toast the brioche buns. 

💕Spread the mayo over the base of each bun and top with shredded lettuce. Add the chicken, then spoon over the remaining hot honey glaze and scatter over the chilli flakes just before adding the top bun.

One Pan Creamy Cajun chicken & chorizo gnocchi 🤍

Proper comfort food that the whole family will love, but still high protein and lower cal at just 516 cals with 43g protein per portion. Easy, cosy and perfect for busy weeknights. Plus all done in one pan so less washing up 🤌🏼

Ingredients (serves 4): 
65g chorizo diced 
500g chicken breast diced 
1 tbsp cajun seasoning 
1 tsp smoked paprika 
Salt 
Black pepper 
400g fresh gnocchi
1 heaped tsp chopped garlic 
2 red pepper diced 
2 tbsp tomato puree 
1 chicken stock cube crumbled 
200ml Elmea single cream alternative 
150ml hot water 
80g mozzarella grated 
30g reduced fat cheddar grated 
2-3 sprigs of fresh parsley chopped 

💕Fry off the diced chorizo until crisp and the oils have released. Lift the chorizo out with a slotted spoon and set aside, leaving the oil in the pan.

💕Add the diced chicken to the pan. Season with the Cajun seasoning, smoked paprika, salt and black pepper. Cook for 5-6 minutes, stirring regularly, until the chicken is lightly golden on the outside.

💕Add the chopped garlic and diced red peppers and cook for a further 2-3 minutes until starting to soften.

💕Stir in the tomato purée and cook it out for 30 seconds. Sprinkle in the crumbled stock cube, then pour in the hot water and cream. Stir well and bring to a gentle simmer.

💕Add the gnocchi directly to the pan and stir to coat in the sauce. Simmer uncovered for 6-8 minutes, stirring occasionally, until the gnocchi is tender and the sauce has thickened.

💕Lower the heat and scatter over the mozzarella and cheddar. Cover the pan with a lid for 3-4 minutes until the cheese has melted. 

💕Finish by scattering the crispy chorizo and fresh parsley over the top just before serving.

Chicken & Bacon Burger Sauce Loaded Fries 😍

A lower cal, high protein fakeaway that’s perfect for the weekend and tastes UNREAL 🤌 Homemade fries (for volume), loaded with seasoned chicken bites, burger cheese, mozzarella, crispy bacon and homemade burger sauce… BANGIN 

Ingredients (serves 2): 
500g maris piper potatoes cut into fries
½ tsp garlic granules 
½ tsp smoked paprika 
Salt
Black pepper

For the rest:
250g chicken diced 
1 heaped tsp garlic granules 
1 heaped tsp onion granules 
½ tsp smoked paprika 
Salt 
Pepper 
2 streaky bacon rashers
70g lighter than light mayo 
1 tsp reduced sugar tomato ketchup 
¼ tsp yellow mustard 
1 tsp gherkin juice 
1 gherkin finely diced 
2 reduced fat cheese slices 
50g mozzarella grated 
2 spring onion chopped 

💕If you have time, soak the fries in cold water with ice for 20-30 minutes. Drain well, pat dry, then season with the garlic granules, smoked paprika, salt and pepper and spray lightly with oil.

💕Air fry at 180°C for 25 minutes, shaking halfway, or bake at 220°C / 200°C fan for 35-
40 minutes, turning once, until crisp and golden.

💕Season the chicken with the garlic granules, onion granules, smoked paprika, salt and pepper. Pan fry for 6-8 minutes until cooked through and lightly golden. Set aside.

💕Grill the bacon until crisp, then finely chop.

💕Mix together the mayonnaise, ketchup, mustard, gherkin juice and diced gherkin until smooth.

💕Tip the fries into an ovenproof dish. Tear over the cheese slices, scatter over the chicken and sprinkle with the mozzarella. Grill for 2-4 minutes until melted and bubbling.

💕Drizzle over the burger sauce and finish with the bacon and spring onions.
